Gluten-Free Cheese and Coconut Bacon Scones

Nothing like a good ol’ cheese and bacon scone! If you’re after a meat-free option that still retains the bite and smokiness of bacon, try adding a sprinkle of Coconut Bacon into your savoury baked goods. These fluffy scones are gluten free and vegetarian, and totally irresistible!

Gluten-Free Cheese and Coconut Bacon Scones

Makes 4-5

INGREDIENTS

  • 150g almond meal
  • 75g cornstarch
  • 30g rice flour
  • 2 tbsp baking paper
  • 1/2 tsp xanthan gum
  • 1/2 cup milk
  • 50g grated cheese
  • 30g Top That! Coconut Bacon
  • 1/4 cup + 2 tbsp soda water

METHOD

  1. Preheat oven to 200°C fan bake. Line a large baking tray with baking paper.
  2. In a large bowl, combine all dry ingredients. Add wet ingredients and mix with a knife until a rough dough forms.
  3. Turn dough out onto prepared baking tray and form a rough square about 10cm across. Cut into 4-5 portions.
  4. Separate the portions only slightly, leaving about 1cm between each. Brush with milk of choice and bake for 20-25 minutes, until well risen and golden brown.
  5. Serve warm with spreads of choice and a sprinkle of Top That! Coconut Bacon.
