29 Mar Vegan + Gluten Free Spiced Koftas
These koftas have a delicious meaty flavour and texture, thanks to the addition of Cheesy Chilli Tahini Meal Topper. The topper is blended into a veggie-based kofta mix, lending its smokey, savoury flavours and meaty textures. The topper also helps the mixture to bind, thanks to its oaty clusters. Serve these morsels on top of a nice big salad, inside pita pockets or sandwiched between burger buns.
Vegan + Gluten Free Spiced Koftas
Makes 10-12
INGREDIENTS
- 1 onion, diced
- 1 large clove garlic, finely diced
- 200g eggplant, roughly chopped
- 150g mushrooms, roughly chopped
- 2 tsp smoked paprika
- 2 tsp ground coriander
- 1 tsp ground cumin
- 1/8 tsp ground nutmeg
- 6 tbsp chickpea flour
- 1/4 cup Top That! Cheesy Chilli Tahini Meal Topper
- 2 tbsp ground flaxseed
- 1 tbsp BBQ sauce
- 1 tbsp soy sauce
- 1 tbsp finely minced oives
- 1 tsp tomato paste
- 1 tsp dried sage
- 1/2 tsp dried mixed herbs
METHOD
- Heat 1 tbsp olive in a medium saucepan over medium-high heat. Add onion and garlic and cook, stirring, for 5 minutes until beginning to become translucent.
- Add spices and cook for 1-2 minutes, stirring, until fragrant.
- In a food processor, pulse eggplant and mushrooms until a meaty texture. Add to the pan and cook, stirring, for 5 minutes.
- Pulse Top That! Cheesy Chilli Tahini Meal Topper until a coarse, meaty crumb.
- Add to the pan along with remaining ingredients and mix to fully combine. Transfer to a bowl and chill for 30 minutes.
- For mixture into 10-12 oblong shaes.
- In a large frying pan, heat 2-3 tbsp olive oil over medium-high heat. Add koftas and cook for 10-15 minutes, turning occasionally, until browned and crisp.
- Serve hot with fresh salad, condiments, herbs and extra Top That! Cheesy Chilli Tahini Meal Topper.
